This coffee is the fruitiest and silkiest natural coffee you will ever experience. Sebastian himself describes it as well-balanced, with an amazing body and a mix of fruit punch and chocolate flavors. The unique flavor profile is achieved through a process called carbonic maceration, which involves fermenting the coffee cherries in CO2-filled containers at a controlled temperature for 100 hours. The coffee is then dried in mechanical silos at around 40°C until it reaches 11% humidity. All of this takes place at the processing facility built by Sebastian Ramirez on his main farm, Corcega, which processes his entire annual production. We are thrilled to be working with such high-quality coffees.
